Important Installation Instructions
It is important to completely read through the instructions for your software version before attempting a software update. If you feel you may need assistance, then please call the Alto-Shaam service department at 1-800-558-8744 so that an expereienced technician can assist with the installation procedures.
Failure to follow the installation instructions exactly as outlined on this page or in the video demonstrations may result in an inoperable oven and a service call.
The current software version number is 2.36 (as of 6/3/2013)
On the Computer
1. Plug a USB flash drive into one of the USB ports on your computer. This USB drive should only be used for updating software on your CombiTouch. Delete all files from the USB drive before proceeding to the next step.
2. Right click on this file, combitouch_firmware.zip, and select "Save Target as..."
3. Select the drive your flash card is in.
4. Select "Save" and the file should be saved to the root directory (this is the top level directory of your flash drive).
5. Navigate to the combitouch_firmware.zip file on your USB flash drive.
6. Right click on the combitouch_firmware.zip file and select "Extract all..." The extracted files and the .zip file MUST reside in the root directory of the flash drive. Delete all text after the "\". This will save the extracted files to the root directory of the flash drive.

7. Click on "Extract."
8. Your USB drive root directory should look similar to the following image. Note: Your screen may look different depending on your make and version of operating system.
On the CombiTouch
1. Navigate to the Mode Selection screen.
2. Press the Service Mode button.
3. Using the number displayed on the CombiTouch screen, reference the appropriate steps below to update to the newest version of software.
DB Version - 2.0.6 or older
On the CombiTouch
1. Using the on-screen keyboard, enter the Service Mode password, "halo heat", and then press the green check mark in the lower right-hand corner of the screen.

2 . The Service Mode screen will appear. Press the Software Load button.
3. Remove the cap of either of the oven's USB ports on the left side of the unit and insert the USB flash drive.
4. On the Software Load screen, press the bottom icon to load the Display Board software. If the flash drive is not recognized by the Combitherm and a question mark appears on screen, call Alto-Shaam Service at 1-800-558-8744.

5. Wait 2 minutes as specified by the following animation, and then turn the oven off and on again.

6. Navigate to the Mode Selection screen.

7. Press the User Settings Mode button.

8. Use the right arrow to navigate to the second page.

9. Press the UPDATE key shown below. NOTE: During the update process, the screen will go blank and the control will restart. Do not interact with the oven. Do not press the off key for any reason. Doing so can cause the oven to become inoperable. If in doubt, wait 5 minutes before interacting with the oven.

10. The oven will show the "Update Successful" screen once it sees a successful update, shown below.

NOTE: If the control presents an E100 error code, then you may need to perform the update again. If this error is persistent after the next update, please contact the Alto-Shaam Service department at 1-800-558-8744.
11.When the oven is operational again, you may remove the flash drive.
DB Version - 2.0.17
On the CombiTouch

6. You may remove the flash drive when the oven is operational again.
DB Version - 2.20 or newer
On the CombiTouch
1. Navigate to the Mode Selection screen.

2. Press the Settings Mode button.

3. Use the right arrow to navigate to the second page.

4. Remove the cap of either of the oven's USB ports on the left side of the unit and insert the USB flash drive.
5. NOTE: During the update process, the screen will go blank and the control will restart. Do not interact with the oven. Do not press the off key for any reason. Doing so can cause the oven to become inoperable. If in doubt, wait 5 minutes before interacting with the oven. Press the UPDATE key shown below. CombiTouch Recipe Management Software & User Instructions
Save the file to your desktop or location of your choice. (If download does not begin immediately, right click on link and select "Save Target/Link As..." Then save file to your desktop or location of your choice.)
System Requirements:
- PC running Windows XP, Vista, or 7 (with all latest Windows Updates installed) with a CD drive and USB port
- USB memory stick
- 1. Navigate to the downloaded file. Double click on the SetupCombiTouchRecipe Management.msi file to begin installation.
- 2. After the installation is complete, double click on the
CombiTouch Recipe Management Software shortcut on your desktop or in the Start Menu to launch program.
To create a new recipe:
- 1. Click
NEW RECIPE icon.
- 2. Enter new recipe title in
EDIT RECIPE TITLE bar
- 3. Select desired cooking mode, temperature, time or cook by probe and any auxiliary functions (Gold-n-Brown level, CombiSmoke, fan speed, etc.)
- 4. Click
SEARCH FOR IMAGE icon. Navigate to saved BMP, PNG or JPG image. Click OK to select image. Skip this step if there is no image for a particular recipe and the title of the recipe will display instead.
To edit a recipe via software:
- 1. When the Recipe Management Software launches, the factory default file (recipe.xml) is automatically loaded on the screen. If other custom recipe files need to be edited, click
OPEN RECIPE LIST and select desired recipe list.
- 2. Click on the
RECIPE LIST DROPDOWN box and select recipe from the list to edit.
- 3. Make desired changes to mode, temperature, time, etc.
- 4. Click
SAVE RECIPE LIST icon to save changes/additions. Save over existing file (recipe.xml) or save a new recipe file. Note that multiple lists can be saved, however only one list at a time can be used on the CombiTouch control.
- 5. Click
EXPORT TO USB STICK icon to export the currently loaded recipe file and all required pictures to a USB memory stick. Select the USB memory stick from the folder selection list and click OK.
- 6. Remove USB memory stick from the USB port after light on USB has stopped flashing. Replace USB port protective cap. Follow steps 4-10 from previous section ("To save edited recipe list and upload to CombiTouch oven") to upload the new file.
To rearrange recipe order:
- 1. Click on the recipe dropdown list and scroll to the recipe to be moved.
- 2. Right click on the recipe name. A sub-menu will appear.

- 3. Choose desired option. With the sub-menu dropdown highlighted, use keyboard shortcuts (Ctrl + up arrow, Ctrl + down arrow, Ctrl + left arrow or Ctrl + right arrow) to quickly move recipes.
To save edited recipe list and upload to CombiTouch oven:
- 1. Click
SAVE RECIPE LIST icon to save your changes and additions. Create a new recipe list by renaming the file, or save over the existing default list (recipe.xml). Note that multiple recipe lists can be saved, however only one list at a time can be used on the CombiTouch control. NOTE: The best practice is to rename your recipe list file to something that makes sense to you, other than the default file name, recipe.xml. Any file named “recipe.xml” will be overwritten if the CombiTouch Recipe Management Software is updated or reinstalled on your computer, and any customizations to that file will be lost. Be sure to save your recipe list file in a back-up location as well.
- 2. Click
EXPORT TO USB DRIVE icon to select the recipe list to transfer to CombiTouch oven.
- 3. Press the
ON button.
- 4. Remove USB memory stick after recipe file is saved and plug into CombiTouch oven's USB port. (On left side of oven under black protective cap)
- 5. Press
red BACK ARROW to go to the Start Screen.
- 6. Touch the
UPLOAD/DOWNLOAD FILES icon on the Start Screen.
- 7. Touch the
COPY RECIPES FROM USB STICK TO OVEN icon. The recipes will begin to upload. NOTE: ALL RECIPES CURRENTLY ON THE COMBITOUCH OVEN WILL BE OVERWRITTEN.
- 8. A green checkmark
will appear on the screen when the transfer is complete. Touch the green checkmark to acknowledge
- 9. Press
red BACK ARROW to return to the Start Screen and resume regular operation.
- 10. Remove USB memory stick from the USB port after light on USB has stopped flashing. Replace USB port protective cap.
