Cooking a Turkey in an Alto-Shaam Cook & Hold Oven

1. Set the cook temperature to 250ºF (120ºC).


2. Set the hold temperature to 160ºF (70ºC).


3. Turn the timer past 3 hours, then to 30 minutes to preheat the oven.


4. Load the turkey into the oven.


5. Set the door vent to half open.


6. Set the timer to cook for 10 minutes per pound of turkey. Add 30 minutes for each additional turkey.


7. Allow the turkey to hold for at least one hour after the timer sounds.


Examples:

  • One 20-pound turkey: 10 minutes x 20 pounds = 200 minutes (3 hours, 20 minutes)
  • Three 20-pound turkeys: 10 minutes x 20 pounds + 30 + 30 = 260 minutes (4 hours, 20 minutes)

1. Set the cook temperature to 250ºF (120ºC).


2. Set the hold temperature to 160ºF (70ºC).


3. Set the probe temperature to 140ºF (60ºC).


4. After oven is preheated load the turkey into the oven, insert the probe into the thigh, set the door vent to half open, close the door, and press the start button.


5. Allow the turkey to hold for at least one hour after the cooking cycle is complete.
