Featured Recipe: Smoked Sea Salt (June 2010)

Ingredients
Sea Salt
Wood for Smoke
Preparation
Preheat Combitherm to 300°F (149 °C) convection mode for 10 minutes.
Soak favorite wood for ten minutes in water. Drain water from wood and place wood in wood chip container.
Put wood chip container in Combitherm smoker.
Place Sea Salt on pans and place in oven.
Smoke for 15 -20 minutes at 300°F (149 °C) convection mode low speed fan.
Let rest in oven for 10 minutes to absorb smoke after smoke cycle is done.
Remove cool and package.
Serving Tips
Use in favorite BBQ sauce or other cooking preparation.
