Featured Recipe: Combitherm Potato Chips (March 2006)

Baked Chips

Ingredients


Russet potatoes
Oil
Salt or other seasonings

Preparation


Preheat Combi Oven on Steam to 212 F (100 C).
Slice the potatoes on a mandoline to the shape you desire and about 2mm thick. Toss in oil and lay out on a sheet tray in a single layer.
Steam chips for 4 minutes, then go directly in to Convection mode and bake at 380 F (193 C) for 10-12 minutes, until crisp and golden.
Remove from pan and toss with salt or other seasoning blends like curry powder or chilies.

Serving Tips


Serve as a garnish to an entree or on a platter with crumbled blue cheese or horseradish sauce.
