Featured Recipe: Yogurt Cake (March 2003)

Makes one full steam table pan

Ingredients


3 ½ C. (828 ml) flour
3 t. (15 ml) baking powder
1 C. (237 ml) butter
2 C. (473 ml) sugar
1 C. (237 ml) yogurt
5 eggs
grated rind of 1 lemon

Preparation


Sift flour and baking powder together. Cream butter and sugar until smooth. Add yogurt and mix well, add eggs and lemon rind, and beat for 5 minutes.
Add flour mixture a small amount at a time, beating well after each addition. Pour into greased pan.
Bake in preheated Combi Oven on convection at 300 F (149 C) for 20 minutes or until done.
Turn pan over on a plate to cool, remove from pan and dust with confectioners sugar.

Serving Tips


Serve garnished with fresh seasonal fruit.
