Alto-Shaam invented low temperature cooking when we produced the first Cook and Hold in the 1960s. Since then, we’ve made steady improvements to this time-honored oven. More than four decades later, we’re happy that the Cook and Hold is receiving the same awards year after year. It shows that we aren’t re
