Cordyceps Flower Chicken Soup prepared in a Cook & Hold


  • 1 Chicken
  • Cordyceps Flower (50g)
  • Salt & Pepper


1. Wash the chicken and cut into small pieces
2. Put into the boiled water container to remove the blood, then wash the chicken again
3. Add enough water in the container to boil it again
4. Put the chicken and the soup into a GN pan and add the cordyceps flowers
5. Sprinkle the Crispy Skin water all over the outside of the duck, let dry, and repeat one more time
6. Preheat the Cook & Hold to 125°C
7. Add the soup and cook for 3 1/2 hours 
8. Hold at 70°C overnight
9. Before service, add salt and pepper
