Ingredients

2 filets of Sea Bass; salt and pepper

Preparation

Step 1: Preheat the Combi  to 300℃. Season sea bass with salt and pepper. Set oven to convection mode at 300℃ and 0% humidity and cook the sea bass for 1 minute.

Step 2: Set oven to combi mode at 175℃ and 80% fan speed and cook for 5 minutes.

Step 3: Cream sauce: 100gm of cream, a little white wine, salt & pepper.

       Put the white wine, salt & pepper into the cream, then reduce until a little bit thick. Poor the sauce over the fish
