Portuguese "Churrasquera" Chicken

Switch your barbeque selection up with this traditional portuguese dish.

Ingredients

Marinade 
1/2 C. (11. ml) olive oil 
1/4 C. (59 ml) tomato puree 
8 garlic cloves, minced 
3 t. (44 ml) honey 
1/4 C. (59 ml) Portuguese Pimienta puree 
1/2 t. (3 ml) oregano 
1 t. (5 ml) ground cumin 
2 t. (10 ml) Kosher salt 
3 T. (15 ml) lemon juice 

two 3 lb. (1.36 kg) chickens 
3 lb. (1.36 kg) Yukon gold potatoes, cut into wedges

Preparation

Mix marinade and divide into 3 containers. Marinade chicken in one container of marinade for 1 hour up to 6 hours. Toss potatoes in another container of marinade. 
Preheat rotisserie to 300 F (149 C). Skewer chickens and place potatoes into a roasting basket. Program rotisserie to roast for 35 minutes at 300 F (149 C) then 350 F (177 C) for an additional 10-15 minutes.


Serve the chickens with the remaining marinade, potatoes and salad.
