Combitherm® combi ovens make it easy to prepare steaks for banquets is to use a cook/chill process through Alto-Shaam's rack management system. By cooking ahead in bulk, plating cold and rethermalizing on the day of the event, you can reduce the amount of labor required for banqueting and catering.

Preparation

  1. Preheat combi oven to 300­°F (148°C).

  2. Season steaks and place on a sprayed sheet pan.

  3. Cook in combi mode at 300°F (148°C). Set the humidity at 20% until steaks have an internal temperature of 120°F (49°C) for rare.

  4. Hold for service or chill for plate retherm.
