300g tenderloin steak; olive oil, salt and black pepper
Step 1: Preheat the combi to 300℃.
Step 2: Season the tenderloin steak with olive oil, salt and pepper and put into the Combi. Set to convection mode at 280℃ and grill the steak for 3 minutes on each side.
Step 3: Take the steak out of the Combi and put into the Alto-Shaam Halo Heat™ Cook & Hold or holding cabinet, set to holding mode 60℃, and hold for 5 minutes.
