  • 300-TH-III Deluxe Control Cook & Hold Oven 36 lb (16 kg), 3 Full-Size/GN Pans Capacity

    The 300-TH/III is perfect for kitchens with tight spaces and allows for cooking by time or by probe with the deluxe controls. Halo Heat® technology, powered by unique thermal cabling, is the heart of the Cook & Hold. The oven cavity is surrounded with gentle, precise heat to evenly cook your food.   • CTX4-10E Combi Oven with ExpressTouch Control 10 Half-Size Sheet Pan or 5 Full-Size (GN 1/1) Pan Capacity

    The CT Express™ is the most compact Alto-Shaam combi oven ever with full-size performance and the capacity to hold five (5) full-size hotel (or GN 1/1) or ten (10) half-size sheet pans. With the smoker option, the unit has a capacity of four (4) full-size hotel (or GN 1/1) or eight (8) half-size sheet pans. Whether it’s on the main production cook line or doing double duty as a finishing oven, the CT Express offers maximum performance and flexibility in half the space of traditional combi ovens. Add an optional ventless CombiHood® and avoid the need for a costly ventilation hood. The high-power fan draws steam and fumes into the hood intake and out the top surface exhaust vent, trapping grease and vapors as the air moves through the ventilation system.  Or, choose the innovative catalytic converter option to place this combi anywhere without a hood.

    • Capacity – 10 half-size sheet or 5 steam/Gastronorm pans.
    • Full-size Performance – For kitchens that have tight space requirements, the CT Express offers maximum performance and flexibility in two-thirds the space.

    The XL-400 Xcelerate® Hi-Speed Oven combines microwave and forced air impingement technologies to cook up to 10 times faster than a conventional oven. With a 50% larger cooking cavity, this unit easily fits a 14” pizza. Use this oven to expand prepared food offerings in convenience stores and limited service restaurants. *Available in North and South America only.

  • 20-20MW Mobile Roll-in Combimate Halo Heat Holding Cabinet 480 Lb (218 Kg), 40 Full-Size/GN Pan Capacity

    Complete the rack management system with the companion Halo Heat® holding unit. Rack compatible with Alto-Shaam roll-in Combitherm® ovens and roll-in QuickChiller™ blast chillers. 

    Allows for advanced delivery and staging of your foods so that you can provide high quality meals to your guests. The design allows Alto-Shaam roll-in pan or plate carts to be rolled directly into the warmer cavity. Accommodates optional roll-in racks for Combitherm oven Model 20-10 or 20-20.

    • Capacity – 480 pounds (218 kilograms), 40 full-sized/GN pans, 10 sheet pans (20 with additional shelves). 
    • Companion Warmer – Working seamlessly with your Combitherm racks, Alto-Shaam CombiMate companion warmers keep food hot and fresh with gentle heat and no added moisture. The interchangeable design allows for integrated rack management or plated rethermalization resulting in increased efficiency and reduced labor.
    • Temperature Control – An adjustable, electronic thermostat with digital display monitors the inside temperature to ensure food is being held at safe and precise temperatures.
  • QC2-100 Roll-In Blast Chiller 480 lb (218 kg), 40 Full-Size GN Pans capacity

    The QC2-100 QuickChiller™ provides the industry’s only fully integrated rack management solution that brings you all necessary components to support production, chilling, rethermalization, staging and service. Whether in a central production or commissary operation, or serving a plated meal function for 4,000 guests, we have you covered. With a fully integrated roll-in food cart, the QC2-100 works in conjunction with compatible CT Series Combitherm® ovens and CombiMate® companion mobile warmers. 

    • Capacity – 480 pounds (218 kilograms), 40 full-size (1/1 GN) pans, 20 full-size sheet pans (on wire shelves).
    • 4 operating modes – Modes include a quick-freeze mode, soft-chill mode for less dense items, hard-chill mode for more dense items, holding mode for chilled or frozen items, and automatic defrost. 
    • Temperature probes – Includes 3 internal detachable food temperature probes and standard HACCP dataport.
    • Roll-in cart – The cavity deck design prevents contaminant material from cart wheels from entering the compartment during normal use.
    • Safety – Alto-Shaam’s QuickChiller freezer/chiller refrigeration systems are designed to rapidly and uniformly decrease the temperature of hot foods to either a chilled or frozen state well within HACCP/FDA code requirements.

    A key part of our fully integrated banqueting system, the CT PROformance™ 20-20 Combitherm® oven is equipped with a roll-in cart that allows you to cook food and then roll it into the compatible Alto-Shaam CombiMate® Mobile Warmer or QuickChiller™. Then, when it is time for service, plate up the meals and retherm them for quick, consistent results.
