Rapid Cooling for Better Taste, Less Waste

Meals can be prepared up to five days in advance and then stored without any loss in quality after being cooled in a QuickChiller. Our quick chilling system minimizes food waste, resists interior corrosion, and preserves flavor until service.    

Our blast chiller commercial units are available in under counter, worktop, reach-in, and roll-in models. With a touchscreen control, users can select between 20 preset menu choices, such as Soft Chill, Hard Chill, Freeze, and Hold Mode. For more information, users can access an elaborate data log with time stamps and past cooking temperatures (compliant with HACCP requirements), all stored safely on a USB drive. Detachable temperature probes — which are easily interchangeable with the Alto-Shaam CT PROformance™ Combitherm® oven — also help to reduce service costs. All of these innovative features ensure that food stays far from the temperature “danger zone”.
