Surf & Turf (Tenderloin & Shrimps)

Ingredients

250g beef tenderloin; 2 king prawns; 50g clarified butter; ; olive oil; 2g paprika; salt and pepper

Preparation

Step 1: Preheat the Combi to 300℃.

Step 2:  Season the beef tenderloin with some olive oil, salt and pepper and put into the Combi. Set to convection mode at 280℃ and grill the steak for 3 minutes on both sides.

Step 3: Take the steak out of Combi and place into the Cook & Hold. Set to holding mode at 60℃ and hold for 5mn.

Step 4: Season the king prawns with olive oil, salt and pepper.

Step 5:  Place the prawns into the Combi. Set to convection mode at 300℃, full speed, 0% humidity and cook for 2-3 minutes
