  • CTP20-20 Combi Oven 20 Full-Size Sheet Pan or 40 Full-Size (GN 1/1) Pan Capacity

    A key part of our fully integrated banqueting system, the CT PROformance™ 20-20 Combitherm® oven is equipped with a roll-in cart that allows you to cook food and then roll it into the compatible Alto-Shaam CombiMate® Mobile Warmer or QuickChiller™. Then, when it is time for service, plate up the meals and retherm them for quick, consistent results.

    • Capacity - Twenty (20) full-size sheet pans; twenty (20) GN 2/1 pans; forty (40) full-size hotel or GN 1/1 pans; two rows deep.

    The QC2-100 QuickChiller™ provides the industry’s only fully integrated rack management solution that brings you all necessary components to support production, chilling, rethermalization, staging and service. Whether in a central production or commissary operation, or serving a plated meal function for 4,000 guests, we have you covered. With a fully integrated roll-in food cart, the QC2-100 works in conjunction with compatible CT Series Combitherm® ovens and CombiMate® companion mobile warmers. 

    • Capacity – 480 pounds (218 kilograms), 40 full-size (1/1 GN) pans, 20 full-size sheet pans (on wire shelves).
    • 4 operating modes – Modes include a quick-freeze mode, soft-chill mode for less dense items, hard-chill mode for more dense items, holding mode for chilled or frozen items, and automatic defrost. 
    • Temperature probes – Includes 3 internal detachable food temperature probes and standard HACCP dataport.
    • Roll-in cart – The cavity deck design prevents contaminant material from cart wheels from entering the compartment during normal use.
    • Safety – Alto-Shaam’s QuickChiller freezer/chiller refrigeration systems are designed to rapidly and uniformly decrease the temperature of hot foods to either a chilled or frozen state well within HACCP/FDA code requirements.

    Complete the rack management system with the companion Halo Heat® holding unit. Rack compatible with Alto-Shaam roll-in Combitherm® ovens and roll-in QuickChiller™ blast chillers. 

    Allows for advanced delivery and staging of your foods so that you can provide high quality meals to your guests. The design allows Alto-Shaam roll-in pan or plate carts to be rolled directly into the warmer cavity. Accommodates optional roll-in racks for Combitherm oven Model 20-10 or 20-20.

    Halo Heat® technology makes the Cook & Hold oven an essential component of any busy kitchen. Unique thermal cabling allows for consistent low temperature cooking which activates the natural enzymes present in meat and tenderizes as it cooks and holds. Whether preparing prime rib, poultry, roast beef or ribs, the 1000-TH/III Cook & Hold oven produces the highest quality product every time.

    Halo Heat® Drop-In Hot Food Well allows for precise temperature holding and steam-free, versatile display options. The 500-HW contains a five 4-inch or 6-inch deep pan capacity with optional large flange design and offers longer holding capability without the hazards and costs associated with steam-heated equipment. A simple electrical hookup is all you need, with no water, plumbing or water related installation or service costs. 

    • Capacities:
      • 500-HW/D4: 4-3/8" (111mm) depth, accepts five (5) full-size (gastronorm) pans.
      • 500-HWLF/D4: 4-3/8" (111mm) depth, large flange design, accepts five (5) full-size (gastronorm) pans.

  • 1000-BQ2-96 Halo Heat Mobile Banquet Cart 96-Plate Capacity (Standard 10" Diameter Plate)

    Whether on site or off premise, plated function or buffet, Alto-Shaam Mobile Heated Banquet Carts are built to handle your most challenging events. With heavy duty construction, dense thermal insulation, and top-mounted controls, our heated banquet carts are built to work the same long, tough hours you do. Designed to adapt to any type of banquet holding: covered plates, covered or uncovered plate carriers, trays for banquet service and additional shelves for full-size and half-size pans (gastronorm).

    • Capacity –  Holds 96 plates (10 inches in diameter) with covers. Other pan and plate capacities depend on optional rack use. See spec sheet for details.
    • Temperature Control – An adjustable, electronic thermostat with digital display monitors the inside temperature to ensure food is being held at safe and precise temperatures.
    • Temperature held in transport – Gentle Halo Heat® and superior insulation ensures the cavity will only lose 2ºF of air temperature for every 45 minutes that food is held without power, provided the door remains closed.

    The 1000-UP contains two (2) individually controlled holding compartments that are encased with the original Halo Heat® technology and enclosed in heavy-duty stainless steel exterior and doors. Each compartment has one (1) simple control. 

    • Capacity (per compartment) – 120 pounds (54 kilograms), 8 sheet pans.
    • Twice the holding in the same footprint – The 1000-UP Heated Holding Cabinet is essentially one 1000-S stacked on top of another, in a common upright chassis. Each compartment features independent temperature controls.
    • Precision controls – A large digital readout ensures holding at the optimal temperature. Optional multi-shelf timers also are available to help facilitate a first-in, first-out rotation schedule.
