Alto-Shaam to put the focus on cook-to-hold consistency at Pizza Expo 2026
At Pizza Expo 2026, Alto-Shaam highlights ventless cooking and extended holding solutions that help pizza operators deliver consistent quality.
Alto-Shaam will use Pizza Expo 2026 to spotlight solutions designed to help pizza operators deliver consistent quality from cooking through holding, with an emphasis on ventless operation and extended holding performance during peak periods.
Throughout the show, Alto-Shaam will demonstrate its ventless Vector Wide Multi-Cook Ovens, capable of cooking 16-inch pizzas. Featuring independent chambers, Vector Multi-Cook Ovens allow operators to control the temperature, fan speed and cook time in each individual oven chamber for unmatched versatility. Alto-Shaam’s pioneering Structured Air Technology® enables high velocity, focused heat for faster, more even cooking, ensuring the highest quality output. Countertop models are ventless, waterless and compact, offering flexible placement in kitchens where space is at a premium.
Perfectly paired with its cooking solutions, Alto-Shaam will spotlight its range of heated holding equipment, including its 1200-UP Heated Holding Cabinet, designed to support extended holding without compromising food quality.
“Pizza Expo operators don’t just need equipment that ensures the highest quality cooking results, they also need consistency that holds up until the product is served and enjoyed,” says Paul Milione, Regional R&D Chef - Southeast at Alto-Shaam. “At Pizza Expo, we’re spotlighting extended holding alongside ventless and versatile cooking solutions to help operators maintain consistent quality and keep service moving during busy peaks.”
Along with live cooking demonstrations throughout the show, Alto-Shaam's culinary and sales teams will be on-stand to discuss key operator challenges including labor, space and cost efficiencies. Visit Alto-Shaam at Pizza Expo 2026 in Las Vegas, March 24-26 in booth #2175.
