Thanksgiving Dinner: Your Turkey Cooking Guide

Thanksgiving is just around the corner! Whether you are serving up take home meal kits or offering a traditional sit-down experience, it’s easy to add a Thanksgiving dinner to your menu using your Alto-Shaam equipment.

Turkeys can be made in the combi oven, Vector® F Series Multi-Cook Oven, or Cook & Hold Oven – cooked to perfection in a few short hours or slowly roasted overnight and held at a precise temperature until the next morning.

Combitherm® Ovens

CT PROformance Combi Oven with Probe

  • Preheat the oven to 300° Fahrenheit
  • Cook in convection mode for 10 minutes at 250° Fahrenheit
  • Cook in combi mode at 250° Fahrenheit using the probe to cook the meat to an internal temperature at 165° Fahrenheit at 100% humidity and 60% fan

Combi Oven Manually

  • Preheat the oven to 300° Fahrenheit
  • Cook in combi mode at 250° Fahrenheit at 100% humidity and 60% fan
  • Cook for 10 minutes per pound of turkey
  • For the last 15 minutes, raise the temperature to 400° Fahrenheit to improve the color of the birds

Vector® F Series Multi-Cook Ovens

  • Preheat the oven to 300° Fahrenheit
  • Set the probe to cook until the turkey reaches an internal temperature of 165° Fahrenheit, setting the fan speed at 30% with an oven temperature of 250° Fahrenheit
  • Cook time will last approximately 1 hour

Cook & Hold Ovens

Deluxe Control

  • Set the cook temperature to 250° Fahrenheit. Set the probe to have an internal temperature of 150° Fahrenheit
  • Set the hold temperature to 160° Fahrenheit
  • Hold a minimum of two hours

Simple Control

  • Set your cooking temperature to 250° Fahrenheit
  • Cook 10 minutes for every pound of turkey. If you are cooking more than one turkey, add 30 minutes for each additional turkey. So if you are cooking two 17-pound turkeys, you will need to set the cook time for 200 minutes (three hours and 30 minutes)
  • Set the hold temperature to 160° Fahrenheit. Hold the Thanksgiving turkeys for a minimum of two hours
