How Alto-Shaam Equipment Helped Maverik Cook, Hold and Serve Pizza at the Iowa State Fair

At the Iowa State Fair, Maverik put Alto-Shaam equipment to work to help deliver pizza with the consistency and quality the event demanded. 18 Vector VMC2 H4H Multi-Cook Ovens handled the cooking, while 12 Alto-Shaam 1200-UP and 8 1000-UP Heated Holding cabinets kept pizza hot and ready. Across every slice, that equipment lineup carried Maverik's pizza through the entire day.

Fair crowds don't arrive on a schedule, and Maverik needed cooking capacity that could keep up no matter when the rush hit. With 18 Vector VMC2 H4H Multi-Cook Ovens on-site, Maverik's team was able to cook 960 pizzas in 2 hours. Vector's ventless, waterless design let the ovens run on-site without ventilation or plumbing a temporary kitchen usually needs. Each oven's independent chambers let staff cook multiple pizzas at once, so 18 ovens covered what would normally take a much larger equipment lineup.

Cooking pizza quickly only solves half the problem when the line is long. Maverik paired its Vector ovens with 12 Alto-Shaam 1200-UP and 8 1000-UP heated holding cabinets, with each holding 30 pizzas. Some pizzas were held for more than four hours, helping Maverik keep product hot and ready as demand shifted throughout the day.  Alto-Shaam's Halo Heat® technology surrounds food with gentle, radiant heat instead of fans or added humidity, so pizza held its texture and quality instead of drying out or turning soggy under a heat lamp.
