This cookie is a much anticipated Christmas favorite that will always be a staple of any holiday cookie platter.
6 oz (170 g) Almond paste
12 oz (340 g) Sugar
1lb 8 oz (681g) Butter, Soft
8 oz (227 g) Egg whites
2 lb (907g) Bread flour
Mix the sugar and almond paste.
Add the butter and cream until smooth.
Slowly add the egg whites.
Sift the flour and fold in lightly by hand. Do not over mix.
Deposit cookies on parchment paper.
Bake at 375 °F (191°C) until done
