Anise Carrots Sous Vide

Cook & Holds are not just for slow cooking proteins.  Intensify the flavor of your carrots and maintain texture by utilizing Sous Vide in your Cook & Hold. 

 

Ingredients

White Wine ½ c (120 ml) 
Honey 2 T (30 ml) 
Star Anis 1 t (5 ml) 
Orange Juice ½ c (120 ml) 
Reduce by 1/2 
Oil ¼ c (60ml) 
Strain

Preparation

  1. Pour over 30-40 cleaned Baby carrots in vacuum bag
  2. Seal and put into cook & hold oven, Vents open at 180°F 82 °C 
  3. Time 4 hours

Serve with you ideal entrée
