Apple Kugel

Delicious apple kugel baked in a combi oven. 


1 LB. (453 g) flat egg noodles
6 eggs
2 C. (473 ml) sugar
1/4 C. (59 ml) raisins
1 t. (5 ml) vanilla extract
1 t. (5 ml) ground cinnamon
1 t. (5 ml) salt
16 oz. (473 ml) sliced canned apples


  1. Steam the noodles coverd with water in a 2” pan on 212ºF (100 C) steam for 20 minutes, drain and cool. 
  2. In a bowl mix the eggs, sugar, raisins, vanilla, cinnamon and salt.
  3. Add the noodles, stir to incorporate.
  4. Fold in the apples. 
  5. Preheat combi oven to 325ºF (162 C) 
  6. Bake mixture in combi mode at 325ºF (162 C), 100% humidity, 80% fan – use a greased half pan (12"x10"/30x25 cm) for 30 minutes or until the custard is set.

Serve with fresh berries.
