Boneless Pork Chops
Serve the perfect pork chop to 1 or 1000 guests.
Kosher salt1 C. (237 ml)
cold-water 1 gal. (3.7 L)
boneless Pork chops6-oz. (170 g)
salt and pepper to taste
Combine salt and water together for the brine, add Pork Chops and marinade for 20 minutes.
After marinating, drain and dry pork.
Brush with olive oil, season with salt and pepper - then grill mark only one side.
Place in pans and cook in a preheated Combitherm Oven at 170 degrees F.(77 degrees C)steam for well done, 150 for medium for 15-20 minutes or to a minimum of 165 degrees F for well done (74 degrees C).
NOTE: Pork Chops cannot overcook at this temperature.
