Buffalo Wings

Buffalo wings are the perfect appetizer to serve on game day or at other parties. Whether you are preparing these wings for a dine-in experience or for grab-and-go convinience, buffalo wings will be a hit for your customers.

Ingredients

3 lbs. (1.4kg) Whole Chicken Wings 
1/4 C. (59Ml) Kosher Salt 
1 qt (1.14L) Water 
1 tsp. (5Ml) Cayenne Pepper 
1/4 C. (59Ml) Mies One Step Oven Breading 
1/4 C. (59Ml) Hot Sauce 
1 ounce (28 G) Maple Syrup

Preparation

Remove the tips of the wings and discard or save for making stock. Use kitchen shears or a knife to separate the wings at the joint. 

Marinate wings in cold water with salt for 20 minutes and drain. 

Place wings in a plastic bag and add breading and cayenne pepper. Shake until coated. 

Spray cooking pans with cooking spray and place wings on pan. 

Lightly mist cold water over the wings to get tacky. 

Preheat the Combitherm oven to 425° F (218°C) Combi mode. The fan setting should be at 80% and the wings should be cooked in turbo mode.

Roast in the oven at 425° F (218°C) Combi mode for 7 minutes. Turn the wings over and cook 7 more minutes, or until the meat is cooked through. 

Pour the hot sauce and Maple syrup into a bowl large enough to hold all of the chicken and stir to combine. 

Remove the wings from the oven, transfer to the bowl and toss with the sauce.

Serving Tips

Serve warm. Make the wings your own with your kitchen's signature sauce.

Excellent with blue cheese or ranch or blue cheese dressing and celery sticks.
