Chinese Braised Beef
Chinese Braised Beef prepared in a Cook & Hold
Ingredients
- Boneless Beef Ribs (1kg)
- Dark Soya Sauce (2 tbsp)
- Light Soya Sauce (4 tbsp)
- Salt (5g)
- 2 Dried Chilies
- 2 Star Anise
- 1 Cinnamon Stick
- Cooking Wine (1 tbsp)
- Rock Candy (30g)
Preparation
1. Preheat the Cook & Hold to 125°C
2. Cut the beef ribs into 4-5 cm cubes
3. Let boil in a pot of hot water to remove the blood
4. Place all of the seasoning ingredients in a pot, add water, and cover
5. Bring to a boil then reduce to simmer and let the sauce reduce a bit
6. Pour the sauce into a GN pan, add the beef ribs and mix thoroughly then cover the pan
7. Place the pan of beef ribs in the oven and cook for 3 1/2 hours at 125°C
8. Hold overnight at 70°C
