Corn Spoon Bread

This seasonal favorite can be baked á la carte because of the speed of the Alto-Shaam Combi oven. They come out with a crust around the jar but creamy inside.


  • 1 (10 oz.) corn, cut off corn or charred
  • 2 tbs stone ground corn meal or corn flour
  • 2 tbs unbleached white flour
  • 2 tbs sugar
  • 1 tsp sugar
  • 1 tsp baking powder
  • salt & pepper to taste
  • 2 tbs extra virgin olive oil
  • 3 eggs, lightly beaten
  • 1 cup béchamel 
  • 1 cup smoked Colby Jack cheese
  • 2 jalapenos
  • 1 cup cilantro chopped
  • 6 green onions
  • paprika for garnish


  • Pork Belly

  • Shrimp


  1. Preheat Combitherm to 450°F
  2. Grease 6 glass pint mason jars
  3. Prior to baking, smoke the Colby cheese in the Comnitherm smoker for 10 min. Shred the block
  4. In a large bowl, mix together corn, corn meal, flour, sugar, baking powder, salt, pepper, jalapenos, green onions, cilantro, butter, eggs, milk and cheese
  5. Pour batter into prepared mason jars, sprinkle with paprika and bake until dark golden brown (14 min.)
