Grilled Lobster

1 whole lobster (approx. 500g-600g), paprika, salt and pepper; 50g clarified butter. 

Preparation

Step 1: Preheat the Combi to steam at 100℃. Season the lobster with  paprika, salt and pepper. Brush some clarified butter onto it. Put lobster into the Combi, use steam mode at 100℃ (100% fan speed / 100% humidity). Cook for 5 minutes. Heat the browning bar and broil the lobster tail in it for 1 minute
