This recipe makes serving 1 to 1000 easy.
1 C. (237 ml) Kosher salt
1 gal. (3.7 L) cold water
6 oz. (170 g) boneless chicken breasts
salt and pepper to taste
Combine salt and water together for the brine, add chicken breasts and marinade for 20 minutes.
After marinating, drain and dry chicken. Brush with olive oil, season with salt and pepper - then grill mark only one side. Place in pans and cook in a preheated Combi Oven at 170 degrees F. (77 degrees C) steam for 15-20 minutes or to a minimum of 165 degrees F (74 degrees C).
NOTE: Chicken breast cannot overcook at this temperature.
Use in salads or serve with your favorite sauce.
