Red Wine Pear prepared in a Cook & Hold.
1. Preheat the Cook & Hold to 85°C
2. Wash and peel the pears
3. Quarter each pear and remove the seeds
4. In a sauce pan, heat the red wine with sugar, cinnamon stick and lemon peel and let reduce a bit
5. Let cool slightly then pour into a sous vide bag
6. Add the pieces of pear, seal the sous vide bag tightly and shake to cover evenly
7. Place the sous vide bag of pears inside the oven and hold for 4 hours
