Roasted Chinese Lamb Rack
Roasted Chinese Lamb Rack prepared in a Cook & Hold Oven
Ingredients
- Lamb Rack 1pec (1kg)
- Garlic Cloves 2pec
- Ginger Slice (5gm)
- Chili Powder (5gm)
- Cumin (5gm)
- Oyster Sauce (5gm)
- Zanthoxylum oil (5gm)
- Sugar
- Sous Vide Bag
Preparation
1. Put the lamb rack with all of the ingredients into a sous vide bag to marinate, then seal the bag
2. Preheat the combi oven to steam at 100°C
3. Put the lamb rack into the combi using steam mode at 100°C and cook for 10 minutes
4. Preheat the cook & hold oven to 68°C
5. Put the lamb in and use 68°C hold over night
