Roasted pork loin made in the Combi Oven and Cook & Hold Oven.
1 piece of pork loin (200g); olive oil; salt and pepper
Step1: Preheat the Combi to 280℃. Season the pork loin with olive oil, salt and pepper and place into the Combi. Set to convection mode 280℃ at 0% humidity. Sear the pork for 2 minutes until it is just caramelized.
Step 2: Preheat the Cook & Hold to 120℃. Put the pork inside and cook at 120℃ for 7 minutes then hold at 70℃ for at least half hour.
