Roasted Rabbit Leg prepared in a Cook & Hold


  • 2 Rabbit Legs
  • BBQ Spice Mix (10g)
  • Chili Paste (10g)
  • Salt & Pepper


1. Clean the rabbit legs and marinate with all of the seasonings overnight
2. Preheat the Cook & Hold to 125°C
3. Place the rabbit legs in a GN pan and then into the oven
4. Cook for 20 minutes and then hold at 65°C for 1 1/2 hours 
5. Before serving, place the rabbit legs into the Combi oven at high temperature to crisp the skin
