Smoked Tomato Vinaigrette

Smoked Tomato Vinaigrette is a very versatile garnish, and can be drizzle over a multiute of dishes to add new and exciting flavor.  

Ingredients

12 roma tomatoes, peeled
1 C. (237 ml) soy sauce
4 oz. (118 ml) honey
2 oz. (59 ml) pommery mustard
5 garlic cloves, chopped
1/2 oz. (15 ml) crushed red pepper flakes
1/2 bunch scallions, chopped
1/2 C. (118 ml) balsamic vinegar
3 oz. (89 ml) fresh ginger, chopped
1 C. (237 ml) extra virgin olive oil

Preparation

Mix all ingredients, (except oil) in a stainless steel bowl and marinate overnight. Preheat Alto-Shaam Smoker to 250 F. (121 C.) Soak cherry chips in white wine or sambuca for 10 minutes and load into smoker chip tray. Insert chip tray properly into smoker. Place tomatoes on an icing rack over a sheet pan and smoke tomatoes for 1 hour. After smoking, place tomatoes in a blender with 1-1/2 C. (355 ml) marinade and puree. While blending slowly add olive oil. Season with kosher salt and fresh black pepper to taste.

Serve over grilled fish or pork loin. Also great on field greens.
