Surf & Turf (Pork Chop & Shrimps)


250g pork chop; 2 king prawns; 50g clarified butter; olive oil; 2g paprika; salt and pepper


Step 1: Preheat the Combi to 300℃. Season the pork chop with some olive oil, salt and pepper and put into the oven. Set to convection mode at 300℃, full speed and100% humidity. Cook for 4 minutes.

Step 2: Take the pork chop out of oven and place into an Alto-Shaam Halo Heat™ holding cabinet. Set to 70℃ and hold for 20 minutes.

Step 3: Season the king prawns with olive oil, salt and pepper.

Step 4: Place the prawns into the Combi, set to convection mode 300℃, full speed at 0% humidity and cook for 2-3 minutes.
