Culinary Inspiration for a Full Course Meal

With the Alto-Shaam Cook & Hold Oven, the cooking possibilities for are virtually endless. It’s easy to cook a three-course meal using a single oven, which is perfect for chefs working with space or labor constraints. To help plan your next special occasion menu, here are a few of our favorite recipes that harness the Cook & Hold Oven's Halo Heat® technology.  


  • Pate: At the start of a meal, this is the perfect appetizer to pair with cheese, crackers, and red wine. Mushrooms and pistachios set the pate apart, while the Cook & Hold’s even cooking allows you to skip a water bath.
  • Quiche Lorraine: Using the Cook & Hold, this delectable quiche comes out golden-brown and evenly cooked. Composed with bacon, eggs, shallots, and cheese, it’s a little slice of heaven that diners will love.  


  • Braised Lamb Shanks: By cooking the shanks for 20 minutes, placing them in a hot braising liquid, and slow-cooking them for at least 4 hours, you’ll produce the most tender lamb your customers have ever tasted. The dish’s rich and aromatic flavors also pair well with red wine. ​
  • Enchiladas Verde: For a slightly different take on your three-course meal, we recommend cooking this unbelievably tasty Mexican dish. Made with pulled pork shoulder and tomatillos, you can set the ingredients to cook overnight, and start the next workday with intoxicating scents in your kitchen.  
  • Ancho Glazed Pork Ribs: Unlike other recipes in this guide, these pork ribs benefit from our Combitherm oven’s convection and steaming capabilities. After marinating the ribs overnight, simply place them in the oven for 10 minutes on convection mode, and then switch to Combi mode (with 100% humidity) for 70 minutes. The tender pork will be saturated with the ancho, garlic, Aleppo peppers, and other seasonings.


  • Cajeta: If you decide to take the Latin approach, we recommend ending the meal with this special version of dulce de leche, using goat’s milk. Simply add your ingredients to a steam pan, mix them together, and slow-cook them for about 4 hours. The syrup topping pairs exceptionally well with vanilla ice cream.
  • Macaroons: Who doesn’t love macaroons? Using an almond flour base, sugar, and whipped egg whites, you can bake macaroons that rival any fancy bakery. Best of all, you can customize the macaroons with special flavors and coloring.
