CTP7-20-school-food-style_lr.jpgThe combi oven combines a steam and convection oven into one versatile unit and can serve a variety of cooking functions. Alto-Shaam’s combi ovens allow chefs to control humidity and temperature separately, with powerful results. The same oven can be used to dehydrate vegetables, roast pork, steam rice, smoke brisket and bake loaves of bread. 

Alto-Shaam’s line of Combitherm ovens use optional PROpower™ technology to cook food up to 80% faster than standard convection and 20% faster than other combi ovens, with a temperature range that can reach 575ºF (302ºC). This means shorter preheating and cooking times overall. Three distinct power modes — turbo, eco, and reduced power — give you enhanced control over food preparation, speed and energy usage. In addition, any humidity level can be selected from 0-100%, depending on the dish. Inside the oven, an auto-reversing fan with five speed settings helps to efficiently spread heat, for ideal browning and texture.

 Alto-Shaam’s combi ovens also have smart safeguards, such as a CoolTouch3™ triple-paned glass window that keeps heat behind the glass. For no extra cost on electric models, a SafeVent™ steam evacuation system discharges heat before a chef opens the oven door, helping to reduce any risk of burns. Depending on the setting, an optional NSF/UL-approved ventless hood called CombiHood™ PLUS eliminates the need for expensive kitchen hoods. Combined with zero clearance requirements, the combi oven can fit into any kitchen space.

Cleaning-detail_lr.jpgThe PROtouch™ recipe management system with one-touch cooking provides complete control over the oven, allowing chefs and foodservice employees to select pre-programmed recipes for maximum consistency. To store and secure important information, a HACCP data system pairs up with an onboard USB port, so settings can be downloaded and saved for the future.

When it’s time to clean up, Alto-Shaam’s CombiClean Plus™ automated cleaning system saves labor previously spent scrubbing the oven cavity. On the oven’s exterior, a PROrinse™ retractable hose gives you spray-washing power without opening the oven door.
